Easy-Peasy Lemonade

Whether you felt it or not, today was one of the hottest days of the year! In such heat, a quick-to-make yet refreshing drink is definitely on demand. For this recipe, all you need are three ingredients: lemons, water, and sugar. Hope you find this drink as thirst-quenching as I did!


  • 3 lemons
  • water
  • sugar, to taste
  • ice


Thoroughly wash the lemons and juice them. Pour the lemon juice into a pitcher and add about 2 quarts of water. Stir the desired amount of sugar into the lemonade and add a few cubes of ice before enjoying!


Perfect Party Cupcakes

I made these Marbled Cupcakes for a birthday party about a week ago, and to say they were a hit is an understatement! The vanilla and chocolate blend was perfect and the strawberry frosting gave the cupcakes a nice fruity touch (without being too sugary). I used a 1M tip to decorate them, but feel free to get creative and experiment!

Ingredients for Cupcakes (modified from The Steamy Kitchen ) :

  • 4 oz. chocolate chips
  • 8 tbsp. canola oil
  • 1/2 cup milk
  • 1 cup sugar
  • 3 eggs
  • 1 tsp. vanilla extract
  • 1 1/2 cups flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt

Ingredients for Frosting (modified from All Recipes  ):

  • 1 cup fresh strawberries
  • 1 cup butter
  • 1 1/2 – 2 cups powdered sugar
  • 1 tsp. vanilla extract


First melt together the chocolate chips and 2 tbsp. of the canola oil; set aside. Combine the rest of the oil, milk, sugar, eggs and vanilla extract in a bowl. In a separate bowl mix together the flour, baking powder, and salt. Slowly add the flour mixture into the liquid mixture, mixing well.

Separate the mixture into two halves. In one half pour the chocolate mixture and stir until combined.

In cupcake liners, spoon the mixture into each liner, alternating between the vanilla and chocolate mixture. Take a toothpick and gently stir to make the cupcakes marbled. Bake at 350F for about 25 minutes.

To make the frosting, place the strawberries in a blender and blend until smooth. Pour the strawberry puree into a saucepan and, stirring often, bring to a boil over medium heat. Once the puree has been reduced by half, remove from the heat and cool.

While the puree is cooling, beat the butter until light and fluffy. Add about 1 cup of the powdered sugar and blend together. Then add 2-3 tbsp. of the strawberry puree and the vanilla extract and beat until combine. Add the rest of the sugar and, depending on the consistency you want, you may need to add more of the puree. Refrigerate until use.

Once the cupcakes have completely cooled, frost them in anyway you desire!

Peach Milkshake

Delicious peach milkshake made from real peaches and organic ice cream.  We found this recipe on foodiva.com , but we modified it to make the milkshake thicker.


2 C. of peeled peaches

1 C. of milk

8 large scoops of vanilla ice cream

1/4 C of pineapple juice (to add sweetness)

1 Tbs. of sugar

We added all of the ingredients into our blender then blended the mixture until smooth. Then, we poured the peach milkshake into a glass and enjoyed!       (This recipe made three milkshakes)

Cherry Strudel (Pita od Trešne)

Sour cherries sprinkled with sugar and rolled into filo dough. A delicious combination yet easy  to make! Depending on how sour or sweet your cherries are, you may need more or less sugar. But no matter what your measurements are, this dessert is  guaranteed to be delicious!


  • 4 cups cherries
  • filo dough
  • breadcrumbs
  • sugar


Take out the seeds from the sour cherries. Take a sheet of filo dough and dap oil on it. Repeat this for another sheet. Then, about an inch from the edge of the shorter side, sprinkle breadcrumbs (about an inch wide) down the side; the breadcrumbs keep the filo dough from getting soggy. Layer the cherries on top of the breadcrumbs. Generously sprinkle sugar over the sour cherries. Roll up the filo dough and place in an oiled pan. Repeat this until you use up all of the cherries (about 4 times).

Bake in the oven at 390F for about 40 minutes (the top of the pastry should be golden brown). Enjoy this yummy dessert!

Gluten-Free Dessert Pizza

Today we made a delicious, gluten-free, dessert pizza! Made with a simple cookie bottom and cream cheese layer, this “Springy” dessert is perfect with all kinds of fruits: peaches, strawberries, blueberries and more!  It’s an easy recipe and sure to be loved by all who try it! Don’t feel pressured to make the glaze from the original recipe (http://www.thebakingbeauties.com/2009/05/fruit-pizza.html); we chose not to make the glaze and the pizza was delicious!


For the cookie crust you’ll need…

  • 1/3 cup butter, softened
  • 1/2 cup white rice flour
  • 1/2 tsp xanthan gum
  • 1/2 tsp unflavored gelatin
  • 1 egg
  • 1/3 cup white sugar
  • 1 1/2 tsp milk
  • 1 tsp baking powder
  • 1/2 tsp vanilla
  • pinch of salt
  • 1/4 cup tapioca starch
  • 1/4 cup potato starch

To make the cream cheese layer you only need three ingredients!

  • 8 oz Neufchatel Cheese, softened
  • 1/4 cup confectioner’s sugar
  • 1 tsp vanilla

And last, but certainly not least, you need fruits! Lots and lots of them! We chose to use strawberries, blueberries, canned peaches, and kiwi. If you’re feeling adventurous, don’t hesitate to “branch out” and use other fruits!


To make the cookie crust, beat the margarine until creamy. Next, add the rice flour, xanthan gum, gelatin, eggs, sugar, milk, baking powder, vanilla, and salt. When the ingredients have been combined, add in the tapioca and potato starches.  When the dough is thoroughly mixed, place in a greased-pizza pan. Spread the dough evenly around in the pan. (Note: to do that we placed plastic wrap on top of the dough and, using a rolling pin, spread the dough evenly around.) Bake the dough on 350F for about 10 minutes.

Now on to the cream cheese layer! Beat the cream cheese, confectioner’s sugar, and vanilla until creamy. When the cookie crust is completely cooled, spread the cream cheese mixture onto it.

Once you’ve spread the cream cheese layer onto the cookie crust, place the fruit anyway you want to! (Make sure the fruits are washed, dried and cut accordingly.)

You can refrigerate the Fruit Pizza for a while before serving if you want to (and can wait). If not, eating it immediately is just as good!

Strawberry Cheesecake

Happy Mother’s Day! What better to make than a strawberry cheesecake for this special occasion! Easy to make, this cheesecake will have you (and everyone else who tries it) hungry for more! For the original recipe go to Strawberry Cheesecake Recipe.


  • 9 crushed graham crackers
  • 3 1/2 tbsp. butter, melted
  • 2 8oz packages of cream cheese, softened
  • 1/2 cup sugar
  • 1 tbsp. lemon juice
  • 1 tsp. grated lemon peel
  • 1 cup sour cream
  • 3 eggs
  • fresh strawberries


Mix the crushed graham crackers with the butter. Take the mixture and press it firmly and evenly on the bottom of a well-greased baking pan.  Bake for about 10 minutes on 325F and than set aside.

With an electric mixer beat together the sugar, cream cheese, lemon juice, and lemon peel.  Next, add the sour cream and beat until well mixed. On a low speed, add the eggs, one at a time. Pour into the crust. Bake for about 40 minutes on 350F. Once the center is almost set, take the pan out of the oven and let cool.

Cut the strawberries into thin slices and place on cheesecake. Enjoy and have a great Mother’s Day!

– 2 cups crushed strawberries
– 4 cups sugar
– 1 package SureJell

Today is the 2013 South Carolina Strawberry Festival in Fort Mill, SC! We just came back from picking these luscious berries! The cost is $2 per pound, and just down the road from the fields is the store (Springs Farm Fresh Market) where you can buy the best strawberry icecream!

Strawberry-Blackberry Spritzer

We just made this amazing summer spritzer. It tastes really good and it is easy to make!

Sparkling water
2 cups of ripe fruit(blackberry and strawberry)
1/4 cup of raw honey

First, bring the honey to almost a boil. Next, stir in the berry mix. I used 1 1/4 cup of strawberry and 3/4 cup of blackberry. After stirring, put the mix into the blender. Then, pour the sparkling water into the blended berry/honey mix. Finally, pour into a glass and enjoy this refreshing drink!

Grilled pineapples from last night’s dinner! The pineapple was actually quite good and surprisingly yummy for grilled fruit. The flesh was rubbed with brown sugar before being grilled for five minutes on each side.
